Create sweet, sour, salty and umami flavours
It’s easy, a sweet flavour can be added by using fruit, honey, palm sugar, coconut sugar or sweet tasting vegetables and a sour element can come from using things like lemon juice, tamarind and apple cider vinegar. Salty flavours can be incorporated with seaweed, soya sauce, Tamarin sauce and Himalayan salt and lastly, an umami flavour can be created with foods like mushrooms, asparagus, sweet potato, Chinese cabbage, carrots, avocado and soya beans. Try incorporating all these flavours into a lip-smacking Moroccan curry! The sweetness will come from using coconut milk, adding in preserved lemon can increase the sourness as well as the salt and by incorporating mushrooms and sweet potato you’ll get that umami experience. When doing a stir-fry, Thai soup or salad….always keep these flavours in mind to create a perfect balance.
